Ángel’s tiny palenque, hidden in the forest high in the Sierra Sur mountains outside of Sola de Vega, draws its water from a sacred spring. Ángel is meticulous in his work, using clay pots for distillation and a wooden mallet to crush his cooked agaves by hand. The resulting mezcals are spectacular.
